Spanish Rice

As promised, I am going to share with you my grandma’s recipe for Spanish Rice. Though she wasn’t Mexican you couldn’t tell it from her cooking. But she could cook anything and make it taste wonderful. This rice is delicious. I feel a sense of pride and reverence as I type, reading from the paper with my grandma’s actual handwriting on it. It makes me feel close to her today.
I live alone and sometimes make this rice by itself as a meal. Of course, if you have a family you probably want to make this as a side dish, but it is hearty enough to eat as a meal, maybe with some tortillas, salsa and guacamole salad? Totally up to you.
1 lb. ground beef
1 cup chopped onion
1/2 cup chopped Jalapeno pepper
1 medium clove of garlic
1 tablespoon chili powder
4 cups V-8 juice
1 cup uncooked rice, (not the instant kind)
1 tsp. salt
Brown the ground beef in a skillet. Drain. Add the onion, peppers, garlic and chili powder. Cook until onions and peppers are tender. Add remaining ingredients. Bring to a boil over medium heat. Cover and cook over low heat for 20 minutes or until the liquid is absorbed. Stir occasionally.
Serves four.
